Paleo Pumpkin Chili

Ingredients
  • 1 pound ground beef
  • ½ pound spicy ground pork sausage
  • 1 cup chopped of each yellow, red and white onion
  • 1 cup chopped of each green, red, yellow and orange bell pepper
  • 4 garlic cloves, minced
  • 1 tablespoon pumpkin pie spice
  • 1 tablespoon chili powder
  • 1 tablespoon nutmeg
  • 1 tablespoon ground cumin
  • 2 cans fire roasted tomatoes
  • 2 teaspoons sea salt
  • 2 teaspoons pepper
Instructions
  1. Saute and stir onions and peppers until tender, about 15 minutes.
  2. Stir garlic into onion and pepper mixture and cook until fragrant, about 1 minute.
  3. At the same time as the onions and peppers are cooking, cook beef and sausage in another pan until browned and crumbly.
  4. Combine the cooked meat along with any fat to the onions and peppers
  5. Stir chili powder, cumin, nutmeg, pumpkin spice into the meat mixture; add tomatoes, salt, and pepper and stir.
  6. Bring to a boil, reduce heat to low, and simmer until flavors are blended, 10 minutes.
  7. Add filtered water to achieve thickness and desired consistency.
