Homemade Dairy-Free Ice Cream {No Ice Cream Machine Needed}
Paleo Ice cream!
Recipe type: Snacks
Serves: 4-5
  1. A few hours before making: Pour one of the cans of coconut milk into a freezable container before making your ice cream.
  2. Add both the can of room temperature coconut milk and the other frozen to the blender along with your berries and sweetener and blend.
  3. Scoop into bowl.
  4. Add your additional favorite toppings.
  5. Enjoy!
Also, here is my INSTANT ice cream recipe:
  1. One and a half cups yogurt, kefir, full fat milk or cream. I also use filtered water or juice for gelato or sorbet.
  2. For dairy-free use coconut milk kefir, water or juice.
  3. Three to four cups or 16 ounces frozen berries (or any kind of frozen fruit)
  4. One TBL coconut oil, I like this kind
  5. One to two TBL sweetener (or your preference to taste). I like raw honey
  6. Half to one teaspoon vanilla extract (optional)
  7. You can also add chocolate pieces, peanut butter, nuts, etc...
Combine all ingredients in your blender, Blendtec or Vitamix. Start the speed on low and increase slowly as the fruit blends and breaks up and the ice cream spins around freely. The ice cream is done when all the large chunks of fruit are smooth. Serve and enjoy!
