Paleo French Onion Soup
Paleo french onion soup.
Recipe type: Soup
  • 4 Tbs of butter
  • 1-2 Tbs bacon grease
  • 4 to 6 medium to large onions. I use a mix of leeks/spanish/white/and sweet
  • 1 large sweet pepper
  • 1 quart broth (I use pork bone broth)
  • Sea Salt
  • Pepper
  • 1-2 cups of cheese of choice: Gruyere, Swiss, white cheddar or provolone (if you tolerate dairy)
  1. In a large stock or soup pot, slowly melt your butter to coat bottom of pot. Melt on a medium low heat.
  2. Use a mandolin/food processor or thinly slice by hand your onions so you get lots of nice rings! Start adding the onions as you slice to your pot and stir as you go.
  3. Once all the onions are in, season as you stir.
  4. Turn heat up to medium and let the onions slowly caramelize for about 5 minutes, stirring often.
  5. Once slightly caramelized add your broth, stirring often for another 10-15 minutes.
  6. If you over reduce, add more filtered water.
  7. Continue to season and stir.
  8. Spoon into bowls.
  9. Add your pepper and more salt to taste and then add your cheese.
  10. After adding cheese you can place under broiler until the cheese gets browned up.
  11. Serve and enjoy!
