Sinful Cheesy Cauliflower Pizza Crust
A perfect paleo pizza crust.

  • 1 medium sized head of cauliflower - should yield 2 to 3 cups once processed or 2 bags of frozen cauliflower
  • ¼ teaspoon sea salt
  • ½ teaspoon dried basil
  • ½ teaspoon dried oregano
  • 1 teaspoon garlic powder
  • a few shakes of crushed red pepper (optional)
  • ½ cup shredded parmesan cheese
  • ½ cup mozzarella cheese
  • 1 egg
  1. Preheat oven to 450 degrees
  2. Oil your baking sheet (bacon grease is so amazing or coconut oil).
  3. Cut up head of cauliflower. Cut off the florets, you don't need much stem. Just stick with the florets.
  4. *For frozen cauliflower, preheat oven and oil sheet as noted above , boil 2 bags of frozen cauliflower in medium saucepan on stove for about 5-7 minutes and drain, then proceed with the following steps.
  5. Pulse in your food processor for about 15-30 seconds, until you get powdery snow like cauliflower. You should end up with 3 cups cauliflower "snow". For frozen it won't have a snow-like texture, but will be similar to paleo cauliflower mashed potatoes.
  6. Place the cauliflower in a sauce pan and cook on medium heat and stir often. For frozen skip this step because you already cooked it.
  7. Dump cooked cauliflower onto a clean towel and allow to cool for a bit before attempting the next step, ~5-10 minutes.
  8. Once cauliflower is cool enough to handle, wrap it up in the dish towel and really ring it out well. You want to squeeze out as much water as possible. This will ensure you get a chewy pizza like crust instead of a crumbly mess. I ended up getting about 1 full cup of water rung out.
  9. Place rung out cauliflower into a bowl. Now add ½ cup parmesan cheese, ½ cup mozzarella cheese, ¼ teaspoon sea salt, ½ teaspoon dried basil, ½ teaspoon dried oregano, ½ teaspoon (save the other half for the top of the pizza) garlic powder, and a dash of red pepper if you want.
  10. Add the egg and mix away. Using your hands tends to work best.
  11. Once mixed together, use your hands to form the dough into a crust on your oiled sheet. Pat it down thoroughly, you want it nice and tightly formed together. Don't make it too thick or thin either.
  12. Bake for 8 - 12 minutes at 450 degrees, until it starts to turn golden brown. Remove from oven.
  13. Add your sauce, cheese, and all toppings you want... just how you love your pizza!
  14. Slide topped pizza back in the hot oven and cook for another 5 to 7 minutes until the cheese is melted, bubbly, and slightly golden.
  15. Let cool for a couple of minutes then cut with pizza slicer
  16. Enjoy!!!
  17. *Note - the crust will be slightly soft, but should not be crumbly.
