Pear Feta Grilled Chicken Spinach Salad
Light sweet summer salad.
Recipe type: Salads
  • 2 chicken breasts
  • 1 cup sweet peppers diced
  • 2 cup spinach
  • ½ cup feta cheese diced
  • 1 cup romaine or other lettuce (optional)
  • 1 pear diced
  • 1 tbl powdered ginger
  • Herbs of choice (I like basil)
  1. Grill chicken (I add coconut oil to my chicken and grill before grilling) or pan cook (with coconut oil)
  2. Add ginger to chicken as it is cooking
  3. Put salad together with remaining ingredients
  4. Slice up chicken and add to salad
Fruit Balsamic Dressing
  1. half cup fresh fruit
  2. half cup apple cider vinegar
  3. half cup light olive oil
  4. T lemon juice
  5. Sea salt
  1. Blend all in blender or processor. Keeps for about 10 days in fridge.
