Paleo NoBake Protein Bars

Ingredients
  • 1 c almonds
  • ½ c walnuts
  • ⅓ c chia seeds
  • ⅓ c shredded coconut
  • ½ c pumpkin seeds
  • ½ c frozen/fresh berries
  • 6 pitted medjool dates
  • ⅓ c raisins
  • 2 T extra virgin coconut oil
  • 1 t each of cinnamon and nutmeg
  • 9x9 glass dish
Instructions
  1. Blend in food processor:
  2. Almonds, walnuts, seeds, shredded coconut, and spices (all dry)
  3. Transfer to bowl
  4. Then blend in food processor:
  5. Berries, coconut oil, dates and raisins (wet)
  6. Mix wet and dry well in bowl
  7. Line bottom of pan with extra virgin coconut oil
  8. Flatten mixture in pan and sprinkle with some more shredded coconut flakes
  9. Put in fridge for ~1 hour before cutting into bars
  10. Enjoy!
