Roasted Red Pepper Kale Chicken

  • ½ cup of kale
  • ⅓ cup of roasted red peppers
  • ½ cup of fresh or dried herbs
  • ½ cup of feta cheese
  • 4 chicken breast
  • 1 t coconut oil
  1. Cook up chicken breast using coconut oil (grill or pan)
  2. Using food processor, blend remaining ingredients well about 1-2 minutes (refer to picture for texture)
  3. Scoop the blended mixture onto the already cooked chicken for about 5 minutes while in the pan on med-low heat
  4. Serve and enjoy!
