
Ok, who LOVES pizza! I know I do, but since I've ditched those pro-inflammatory nutrient mugging grains, it makes enjoying one of my favorite foods a little harder. Since I've gone paleo, I have learned that you can still enjoy ALL your favorite foods, but instead you are just using real whole food ingredients. These paleo zucchini pizza boats are perfect for the pizza lover and health conscious kid or adult.
- 2 large or 4 medium zucchini (organic)
- ½ pound of cooked meat of your choice (preferably grass fed/pastured)
- ½ cup marinara or pizza sauce
- zucchini pulp (from scooping out of your zucchini)
- ¼ red onion, sliced
- ¼ cup olives, chopped
- other favorite vegetable toppings
- favorite cheese for pizza
- 2 tablespoons fresh basil
- Preheat oven to 400°F
- Cut the zucchini in half lengthwise and scoop out the inside pulp and seeds, all the way down to the skins
- To help them lay flat on the pan, you can also cut a piece off the bottom of the “boat” to create a flat surface
- You can layer your boats with your sauce, then veggies (and pulp), cheese and meat or you can mix all your ingredients together. If you want to mix your ingredients, thoroughly mix in a bowl: the pulp, meat, vegetables and spices (not the basil) then top with cheese
- Place boats on a cookie sheet and place in oven
- Bake for 20–25 minutes, until zucchini is tender
- Top with basil and serve
