
Who doesn't love tacos??? I know I love them, but now that I am paleo, I've switched to salads and lettuce wraps. Here is my famous tantalizing paleo taco salad. Quick, easy and so delicious, you will love it!
- 1-2 lbs grass fed beef or turkey
- Washed and cut romaine lettuce (3 stalks)
- 1 cup diced tomatoes
- 1 cup diced black olives
- 2 ripe avocados
- ½ cup sliced mushrooms
- ½ red onion
- 2 tsp butter (to saute mushrooms and onions)
- ½ cup sour cream
- 3 T EVO
- Salsa
- 3 tsp Garlic (fresh or powder)
- 3 tsp Chili powder
- 3 tsp Fajita powder
- 3 tsp Cumin powder
- 1 tsp Sea salt
- 1 tsp Black pepper
- Taco Seasoning: Combine all spices into air tight container and shake well.
- Brown up your burger, using a wooden spatula break up the meat and cook until it is not longer pink.
- Caramelize your mushrooms and onions in the butter and then add to browned burger.
- While meat is browning, cut up your lettuce and all vegetables.
- Arrange on 4 plates plate with lettuce on the bottom and add all the rest of the toppings.
- Once meat is down and cooked, add a few teaspoons of your taco seasoning and stir well.
- Add all toppings to your bed of lettuce.
- Scoop out ¼ of the meat onto each of the 4 plates.
- Top with sour cream, salsa and/or EVO.
