
- 2 chicken breasts
- 1 cup sweet peppers diced
- 2 cup spinach
- ½ cup feta cheese diced
- 1 cup romaine or other lettuce (optional)
- 1 pear diced
- 1 tbl powdered ginger
- Herbs of choice (I like basil)
- Grill chicken (I add coconut oil to my chicken and grill before grilling) or pan cook (with coconut oil)
- Add ginger to chicken as it is cooking
- Put salad together with remaining ingredients
- Slice up chicken and add to salad
- half cup fresh fruit
- half cup apple cider vinegar
- half cup light olive oil
- T lemon juice
- Sea salt
- Blend all in blender or processor. Keeps for about 10 days in fridge.
