
Who remembers eating a scrumptious pb & j sandwich when you were a kid? They were so tasty. I have created an irresistible paleo version of this. I needed something high in fat and protein for an expo I will be working at 12 hours a day while BioMeridian testing guests. This was perfect; slightly sweet from the fruit but primarily fat and protein to help balance my blood sugar, mood, energy and metabolism for those long days!
- 1½ cups of nut butter or peanut butter
- 2 T avocado
- ½ cup chopped nuts
- ½ banana chopped
- 1 egg
- 1 T raw honey (can add more for a sweeter treat)
- ½ c frozen or fresh fruit (I used a berry mix)
- 1 t apple pie spice
- 1 t cinnamon
- 2 t sea salt
- Preheat oven to 350 degrees.
- Mix ingredients together well. You may need to chop up the berries and avocado with the spoon.
- Place onto parchment paper or into a muffin tin. Mold into bars, cookies or any shape you'd like.
- Bake for 11-13 minutes.
- Let cool then enjoy!
