
- 1 c almonds
- ½ c walnuts
- ⅓ c chia seeds
- ⅓ c shredded coconut
- ½ c pumpkin seeds
- ½ c frozen/fresh berries
- 6 pitted medjool dates
- ⅓ c raisins
- 2 T extra virgin coconut oil
- 1 t each of cinnamon and nutmeg
- 9x9 glass dish
- Blend in food processor:
- Almonds, walnuts, seeds, shredded coconut, and spices (all dry)
- Transfer to bowl
- Then blend in food processor:
- Berries, coconut oil, dates and raisins (wet)
- Mix wet and dry well in bowl
- Line bottom of pan with extra virgin coconut oil
- Flatten mixture in pan and sprinkle with some more shredded coconut flakes
- Put in fridge for ~1 hour before cutting into bars
- Enjoy!
