
Do you love ice cream but don't love all the questionable ingredients and high sugar content in store bought options? Don't have an ice cream maker, no worries! Here is my tried and true easy homemade dairy-free ice cream recipe with no fancy ice cream maker needed.
- 2 cans of full fat coconut milk (I use this one, it is BPA and preservative free)
- 1-2 cups of your favorite berries
- 2-3TBL raw honey, maple syrup or organic coconut sugar
- additional toppings optional; chocolate, nuts, cacao nibs, peanut butter, etc...
- A few hours before making: Pour one of the cans of coconut milk into a freezable container before making your ice cream.
- Add both the can of room temperature coconut milk and the other frozen to the blender along with your berries and sweetener and blend.
- Scoop into bowl.
- Add your additional favorite toppings.
- Enjoy!
- One and a half cups yogurt, kefir, full fat milk or cream. I also use filtered water or juice for gelato or sorbet.
- For dairy-free use coconut milk kefir, water or juice.
- Three to four cups or 16 ounces frozen berries (or any kind of frozen fruit)
- One TBL coconut oil, I like this kind
- One to two TBL sweetener (or your preference to taste). I like raw honey
- Half to one teaspoon vanilla extract (optional)
- You can also add chocolate pieces, peanut butter, nuts, etc...
