
- 1 bag or box of frozen, chopped spinach
- 1, 14 ounce can or jar of artichoke hearts
- ½ cup cream cheese
- ½ cup sour cream
- 1 small onion, diced (about 1 cup)
- 1-2 tsp butter
- 2 garlic cloves, minced
- 1½ teaspoons sea salt
- 1 teaspoon onion powder
- ½ teaspoon garlic powder
- ½ teaspoon black pepper
- ⅓ cup of chopped cashews
- 1 cup cheese of preference
- Place frozen spinach, cream cheese, cheese and sour cream in sauce pan and start to heat on low heat.
- Drain and roughly chop or food process (this way is really fast) the artichokes.
- Add artichoke to saucepan and stir often.
- Sauté the onions in the butter until translucent, about 10 minutes. Add the minced garlic and cook for another minute.
- Stir in the salt, onion powder, garlic powder, black pepper and heat through.
- Stir in the cashews.
- Serve with cucumbers, baby carrots, sweet peppers, etc...
